I can’t count how many times I have searched for simple weeknight recipes on Pinterest.

After either working all day and dealing with the craziness of pick-up at multiple schools and commuting home, or after an equally long day of being home with the girls, most nights I just want something quick and easy to get on the table.

I think lots of families are the same. Whether it is being on the go, being tired from work, or wanting to just have more time to chat around the dinner table, rather than spending it prepping the meal, easy meals are the way to go for many (easy snacks are too, check out this post for our favorite snack ideas for toddlers).

Having a rotation of simple recipes that can be put into a meal plan—or just figured out last minute—is a must for us. We love trying out new recipes, but most weeknights neither we nor the girls have the patience for a long-awaited dinner.

We tend to do easy meals for everything, including for daycare or for a quick breakfast for toddlers before a busy day.
